Kao Soy is one of well-known Northern style dishes, especially in Chiang Mai as there is a saying “if you go to Chiang Mai and do not eat Kao Soy, it means you have not truly arrived to Chiang Mai”.
Kao soy is made of slimmer chicken, pork or beef with coconut milk, then add Kao soy chili paste, served with crispy egg noodle, sided with spring onion, shallot, coriander, and preserved lettuce.
