Krachel

Original name

Krachel
The "Krachel" are a sweets of Moroccan pastries. Sweet breads , flavored with orange flower water and fennel seeds. An authentic and a very popular recipe.
For breakfast or snack, it could be accompanied with butter and honey and a hot drink (glass of tea, hot milk, coffee and milk).
We also see them during the holy month of Ramadan, especially when they are served at the last meal called "Shur", just before sunrise and the beginning of a day of fasting.

They are small round bread (10 to 15 cm) with wheat flour and eggs, flavored with orange flower water, anise and arabic gum. Before sending them to the furnace of the neighbourhood (often over a wood fire), they are brushed with beaten egg then topped with some sesame seeds as a final touch.

Families prepare large quantity of "Krachel" and keep them in a cotton cloth, far from from light, heat and moisture to take some at the right time!
