| Tajine or tagine, means, firstly, a traditional Moroccan kitchen utensil. It consists of a hollow baking dish madre of glazed terracotta and topped with a conical lid. The food we usually cook in this utensil consist of a kind of stew, which can be composed of meat mixture, poultry or fish, vegetables or fruit and spices. The dishes prepared in a Tajine are cooked over low heat and are both stewed and steamed. The low temperature is to protect this rather fragile cookware because of its material. But in the Tajine the food is much tastier.
