Little wonder of Moroccan street food. Moroccan fritters are crunchy outside and soft intside, just like a pastry.
The dough is prepared the day before and let stand overnight to leaven. The donuts "Chfenj" are then fried at the customer's order. They are very hot when they are served, with the indispensable glass of tea.

You can find it only from the craftsman Chefnaj (craftsman specialized in making and selling donuts) of the neighborhood. You can buy them by unit or by weight (for families' beakfast at home like sunday morning for example).

If you want to enjoy them at your next visit to Morocco, know that it is a dish that qhould be deserved. You must get up early, before the Chefnaj closes his shop (before 9am).
