This small puff cake is the epitome of the delicacy of Moroccan pastries. The sweetness of the almond paste, crunchy moroccan pastry sheets and the sweetness of honey are gathered in this little cake.
The almond paste is perfumed with various condiments: orange blossom water, gum arabic, cinnamon...The #pastry sheets# are stuffed with this paste and then folded to form triangles (the shape of samoosas). A first bath of hot vegetable oil for cooking and making its crispy. Then comes the second bath with honey.
