Alfekkas
Al Fekkas is dry and crisp Moroccans biscuits. It is one of the classics of Moroccan pastry.
Dough is made from flour and eggs, flavored with anise and orange blossom. We can add also dried fruits (usually almonds and raisins).Making of the cakes is more complicated. Tubes are made with the dough for a first cooking (medium temperature). At halftime, we take out the tubes from the oven, cut into small bites. This is what gives them this unique shape.
The cakes are again put in the oven to finish cooking and make them crunchy.
