The pancake with the lentil sauce are inscribed for centuries among the most traditional and reputed dishes in Morocco.
The rfissa (dialect) is an ancestral dish typically Moroccan whose generosity and flavor mark every person who taste it. Served on great occasions and family gatherings except at weddings with one exception, rfissa is so nourishing and satisfying that it is a main dish that can not be presented with several dishes at once.
Based on #msemmen# (Moroccan crêpes) with flour, wheat or semolina, this gourmet specialty is really succulent thanks to the richness of its sauce made with an onion broth mixed with Lentils, with multiple spices such as #Ras El Hanout# , ginger and the indispensable fenugreek (halba), which gives it a truly unique taste and, above all, whet the appetite.
As meat, a whole chicken cooked in a lentil sauce is placed at the end in the hollows of the wafer sheets that have been roughly cut into small pieces (laminated squares) before and placed on a plate.
Finally, the whole thing is watered with the creamy onion sauce, spices and lentils that soaks the patties whose texture in the mouth may seem somewhat dry otherwise.
